The 2025 Herbata House Collection

This collection was born from the sun-drenched flavors and vivid colors of Morocco — a land where tea is both art and offering. To my surprise and delight, many of those same notes now bloom in my own garden, carried by the same wind and warmth that nurture all things kindred.

What moves me most about Morocco’s tisane traditions is their beautiful weaving of cultures — threads from the north and south, the east and west —meeting in a single cup. It is a living story of connection, where every leaf tells of journeys, crossings, and shared roots.

If it can be grown, it can be shared.
If it can be shared,
it can bring us home to one another.

DREAMS OF SAHARA

Floral, honeyed, and softly mint-kissed, this tisane carries the calm of evening in a faraway land.
Sip slowly, and let the horizon blur into dream.

Beneath the amber sun, where the wind hums across endless dunes, a whisper of green life stirs — soft chamomile’s golden petals, and silver-furred ephedra alta breathing quietly in the heat.

This tisane was dreamt in that stillness — a meeting of desert calm and garden bloom.  When I was hiking through the Sahara Desert, it was about two months after a rain fall - the first rain fall in a decade.  The desert was peppered with wild chamomile and desert shrubs-  our guides said they couldn’t remember a time when the entrance of the desert looked so green.

At the Herbata House Gardens, Chamomile brings the hush of twilight; hollyhock and mullein lend the comfort of shade relief, just as the ephedra alta of North Africa.  A touch of stevia sweetens like sand-warmed honey, while mint and daylily cool the air with a sigh.

Dreams of Sahara invites you to rest within its hazy mirage —to wander the horizon between waking and sleep, where the wind tells old stories,
and the heart remembers how to be still.

SONG OF BAHIA

Wandering through the royal courtyards of the Bahia Palace, one is surrounded by columns dressed in mosaic tile and carved cedar — a world where fragrance and color sing together. Around the marble fountain, geraniums, sage, and thyme thrive, while orange trees anchor the four directions, their blossoms perfuming the air. Within these walls, plants once gifted from distant lands grow in harmony with the native flora, creating a living tapestry of scent and shade.

The Song of Bahia is the gentle trickle of water through the fountains, the rustle of birds hidden in vines, the soft echo of ancient wooden doors, and the whisper of footsteps lost in wonder. It is stillness and beauty, exotic and local, — a tea that began when the soul of Marrakech’s most enchanting garden planted the seeds of inspiration for my Herbata House Collection of 2025.

Notes of ginger and cardamom rise first — bright and spicy — grounded by elderberry’s dark fruit and the subtle musk of nutmeg geranium.
Hints of anise hyssop and apple-wood fire roasted coriander linger at the finish, creating a comforting, balanced brew that feels both reviving and serene.

GODDESS OF THE ATLAS

Softly floral with a green,

In the high sun of the Atlas Mountains, where the wind carries the scent of stone, rose, and wild herb, legend tells of a goddess who tended the healing plants that grew between rock and sky. Her breath was the warmth that opened each blossom; her footsteps left springs in the dry earth.

This tea is her tribute — a union of mountain sideritis for endurance, rose and geranium for love and sacred beauty, peony for protection and grace, marshmallow for comfort, and currant leaf for renewal. Together, they whisper of wild roses in desert air and cool shadows among the stones.

A cup of The Goddess of the Atlas calls the heart to soften and the spirit to rise — balancing the strength of the mountain with the tenderness of bloom.

KING’s CUP

Silky and medium-bodied with floral lift and a subtle tannic warmth

A tea born of quiet grandeur and orchard smoke, The King’s Cup is both grounding and luminous — an ode to hearth and crown alike. Grape leaves roasted gently over applewood lend a warm, amber depth reminiscent of late harvest and sun-dried vines. Bergamot brings a noble, pronounced brightness, like citrus oil upon polished wood, while cornflower and violet offer their blue-and-purple grace — the colors of kings and sky spirits.

There is something timeless in its balance: rustic roots mingling with perfumed lightness. A cup that speaks of dignity without pride, power without haste, and the slow luxury of tending to one’s own spirit.
